Located in Andalusia, Spain, Domaine Cauzón is run by Ramón Saavedra. Situated at 1,200 meters above sea level, the vineyards benefit from a unique microclimate ideal for vine cultivation.

Ramón learned winemaking from Manuel Valenzuela of Barranco Oscuro and uses organic farming practices with minimal intervention in the cellar. 

The vineyards haven't been in touch with any type of chemicals since 1999. Grapes are hand-harvested, fermented with native yeasts, and aged without fining or filtration, and with little to no sulfites. The winemaking process includes manual push-downs and long élevages.
