Vinification

Hand-picked grapes from the Widderbock vineyard (planted in 1978). Spontanious fermentation starts in Inox cuves, after a few days pressed and the rest of the fermentation in wooden barrels where it stays for 1 year on the lies with a few bâtonnages.
