For us, Servaas is undoubtedly THE first real natural winemaker in Belgium. His wines are sought-after worldwide, from Belgium to Japan, the US, Switzerland, and beyond.
His estate, Lijsternest, is located in Otegem, West Flanders, where he cultivates PIWI grapes across 5 hectares divided into 3 plots, each yielding a unique cuvée. These grapes are for example Rondo, Solaris, Bronner, Muscat Bleu, Cabaret Noir, Soyhières and many more. Theses varieties are well-suited to the Belgian climate.
In the vineyard, Servaas practices gentle pruning and no tillage.
In the cellar, he enhances the pure expression of the grapes by avoiding sulphur and filtration. Just spontaneous fermentation of the grapes. Nothing more, nothing less.
